Baked Hamachi Collar

  • 1 Hamachi Collar
  • 2 Tablespoon soy sauce
  • 2 garlic cloves
  • 1 Teaspoon ginger
  • 2 Teaspoons mirin
  • 1 Tablespoon lime juice
  • 2 Teaspoons fine sugar


  1. Pre-heat oven to 220ºC
  2. Mix all the ingredients for the glaze and heat in a pan on high heat for about 30 seconds so the sugar melts.
  3. Brush on a light coat of the glaze on the fish as the oven heats up.
  4. Bake the fish so that the sugars in the glaze begin to caramelize, but DO NOT OVERCOOK IT!!!!!  In fact, pull it out when it seems just undercooked, the carryover cooking will finish it for you.
  5. Let it cook for 5 minutes in the oven, and then obsessively check it every two minutes after that.
