Large and flavoursome, tiger prawns are moist, with a crisp bite or snap and a pleasant shrimp taste. Large Black Tigers make excellent hors d’oeuvres, such as shrimp cocktail or grilled shrimp on skewers. They’re also good with pasta or in casseroles, because they can withstand tossing with other ingredients.
Fresh Tips: The digestive tract runs along the back of the body and is best removed. To de-vein a prawn, use a knife to make a slit along the middle of the back to expose the dark vein. Pull out the vein.
