Australians love their pumpkin. As part of a standard “meat and three veg” meal, a slice of roasted pumpkin is often tastefully and deliciously included. Rich in beta-carotene, iron, vitamins and other good stuff, pumpkins are extremely good for you. Generally sweeter than butternut squash, it has a sweet and pleasing texture, boasting exceptional flavour. Deep green colour with some celadon coloured stripes, pumpkins from Australia are denser than local pumpkins because of its smaller cavity. The firm flesh inside is an intense yellow-orange colour.
Australian Pumpkin is versatile and can be used in much the same was as butternut squashes. Try it roasted, steamed, or in your next pumpkin pie or pureed soup.
